How do they make crispy fried onions? In order to ensure the consistency of the quality of fried onions, the following standard process is required.
 
1. Peeling
After selecting high-quality onions as raw materials, the first step is to peel them automatically. Modern factories usually use pneumatic onion peeling machines, which use high-speed airflow to quickly blow off the onion skin, which not only improves efficiency, but also protects the onions from being cut, effectively improving the yield rate.
Notes:
Onions need to be selected in advance, and moldy or rotten individuals should be removed;
After peeling, proceed to the next step as soon as possible to prevent oxidation and discoloration.

2. Slicing
The peeled onions are sliced evenly by a slicer. The commonly used slice thickness is between 1.5 and 3 mm. The even thickness of the onion slices can ensure the uniform heat distribution during frying, thus making the fried onions more crispy.
Precautions:
The cutter should be checked regularly to keep it sharp and avoid the appearance of the cut being broken.
 
3. Cleaning
The cut onion slices need to be cleaned with cleaning equipment to remove the surface juice and reduce the spicy taste. At the same time, some processes also use cold water pre-cooling to help lock the onion tissue and prevent excessive water release during frying.
Note:
After washing, they should be spun or air-dried to reduce surface moisture and avoid oil explosion during frying.
 
4. Coating (optional)
If the product requires a crispier crust or a variety of flavors, the factory will arrange a coating step. The onion slices pass through the coating line and go through two processes in sequence, coating with batter and coating with dry powder, forming a uniform layer of powder. After coating, they should enter the vibrating screen or air drying device to remove excess powder.
Common types of coating include:
Flour, corn starch mixed powder
Seasoning powder (such as spicy, black pepper flavor)
 
5. Frying
This is a key step in determining the crispy taste of onions. The frying machine precisely controls the temperature and frying time, usually between 160℃-180℃ for rapid frying (20-40 seconds) to ensure crispy outside and tender inside. After frying, the onions will immediately enter the de-oiling device to remove excess oil, improve taste and shelf life.
